chamomile, cashew + date smoothie

This smoothie is so dreamlike and whimsical. The sweet dates enhance the chamomile’s subtle flavor and the cashews bring a natural creaminess that makes this comforting and dessert-like without being too heavy.

chamomile, cashew + date smoothie

(inspired by Whole Living)

serves 2-4

2-3 chamomile tea bags

1 cup boiling water

1 cup raw cashews

6 medjool dates*, pitted

1/2 teaspoon vanilla extract

2 cups ice

In a small bowl, combine tea bags, water and cashews; set aside until tea is potent and cashews are soft, about 20 minutes. In jar of blender, combine tea, cashews, dates, vanilla and ice; whirl until smooth.

Dates are a fruit that grow on palm trees. Carefully harvested and typically sold dry, medjool dates are moist, meaty and extremely sweet with a deep honey flavor. Use dates instead of sugar in baked goods or stuff them with blue cheese for a sweet and savory snack. For more information click here.

  1. You’ve got a great looking blog. My tiny plastic co-writers and I love the uniformly bird’s eye photos and the clean layout & type.
    It’s funny – ya don’t see a lot of tea recipes on foodie blogs, or veggie food blogs for that matter. And in this vegan household we seem to consume a lot of tea. So this was refreshing to find AND it sounds delish. Man, even that photo of the dates looks cool – we’ve learned to love dates lately in order to avoid processed sugar. Can’t wait to try this!
