shaved asparagus salad with pine nuts

I had no idea you could eat asparagus raw, but just like shaved zucchini, raw asparagus is crisp with a subtle flavor. As long as you have a decent potato peeler, this salad can be prepared rather quickly for a more interesting take on a favorite spring vegetable. Serve solo or on a bed of arugula.

shaved asparagus salad with pine nuts + parm

serves 2

1 bunch thick asparagus

2 tablespoons lemon vinaigrette

1/3 cup grated parmesan cheese

1/4 cup toasted pine nuts

Freshly cracked pepper

lemon vinaigrette

1 tablespoon Dijon mustard

3 tablespoons lemon juice (about 1-1/2 lemons)

1 teaspoon olive oil

1/2 teaspoon salt

Cut off tender tips of asparagus (about 1 inch off the top); place in a bowl. With a potato peeler, peel remaining asparagus lengthwise until you cannot peel anymore. Place all shavings into bowl. Add vinaigrette, cheese and pine nuts; toss gently. Season with pepper.

  1. Well, our peeler was a little less than ideal; so from a purely aesthetic point of view… our salad was a little sad. However, from a more mouth-oriented point of view it kinda rocked! We had a water glass full of CSA fresh asparagus sitting in the fridge and this was the perfect summer-y way to eat our fresh asparagus. Thank you!
