trader joe’s pretzel invasion

Have you seen the pretzel invasion at Trader Joe’s? My love for pretzel anything started with City Bakery’s pretzel croissant. Now, Trader Joe’s has a pretzel bun, baguette and even their own pretzel croissant!  They’re all great, but the pretzel baguette is ideal for my weekend breakfast sandwich. It’s not too buttery or heavy but tastes clearly of pretzel. Be sure to eat it soon after you buy it or it’ll turn hard as a rock.

egg + avocado breakfast sandwich

serves 2

1 Trader Joe’s pretzel baguette

1 tablespoon butter

2 eggs

1/2 avocado, halved, pitted, peeled and sliced

Salt and pepper to taste

Split pretzel baguette in half lengthwise, scoop out excess bread; toast and set aside. In small skillet over medium heat, melt butter. Crack eggs into skillet, poke yolks until broken and season with salt and pepper. Tilt skillet in all directions, distributing the eggs to form a thin “egg crepe”. Cook until egg whites are no longer transparent. Once cooked through, with a spatula, fold both sides of egg crepe toward the center, creating a narrow omelet. Place on bottom half of baguette; top with slices of avocado and remaining bread; split in two.
