roasted carrot + avocado kale salad

Based solely on color, carrots and avocado make a gorgeous pair. But when salted just right, roasted carrots and avocado make a the perfect pair based on flavor and texture. I’ve had versions of this salad at the Spotted Pig and ABC Kitchen so this genius combination is no secret. When roasted, carrots sweeten and become tender, developing a browned, crusty skin. Seasoned with cumin and coarse salt, these soft, warm caramelized morsels beg for a dip in cooling avocado.

I love the crunchy seeds ABC Kitchen adds to their salad, so I toasted a mixture of my own, which added great texture and a subtle nutty flavor, especially from the sesame seeds. Queso fresco, a soft Mexican cheese with a crumbly texture, adds bites of creamy saltiness. If you can’t find it at your grocery store, a mild feta would be a suitable substitute. These wonderful flavors on a bed of massaged kale makes this a hearty winter salad, because it really is just around the corner.

To toast nuts/seeds, place in small skillet over medium heat; stir constantly until fragrant and brown.

roasted carrot + avocado kale salad

serves 2

6 thin carrots, peeled and cut into 2-inch pieces

2 tablespoons olive oil, divided

1/2 teaspoon salt

1/4 teaspoon cumin

1/8 teaspoon cayenne pepper

1 head lacinato kale, coarsely chopped (about 6 cups)

1 tablespoon lemon juice (about 1/2 lemon)

1/2 teaspoon salt

1/2 avocado, sliced

1/2 cup crumbled queso fresco

2 tablespoons toasted pine nuts, sesame and pumpkin seeds

Preheat oven to 375°F. Line a baking sheet with aluminum foil. In a bowl, combine carrots, 1 tablespoon of the oil, salt, cumin and cayenne; toss until carrots are completely coated. Spread on baking sheet. Bake 20 minutes, turn carrots, bake 15 minutes more. Meanwhile, in a large mixing bowl, combine kale, remaining 1 tablespoon of oil, lemon juice and salt. With clean hands, firmly massage kale until tender and bright green, about 2 minutes. Add roasted carrots; toss gently. To serve, divide kale and carrots among two plates. Arrange avocado slices and top with cheese and seedy nut mixture.
