fried egg + avocado toast

This doesn’t require much of a recipe but I thought I’d share as it is my favorite breakfast. The best part about it is you don’t even need utensils to eat it. It’s just a regular piece of toast with a perfectly cooked egg on top. And it’s fast. While the toast is in the toaster, you crack the egg into the hot buttered pan, slice open your avocado and mashed it up. Before you pick up your toast from the toaster, give your egg a little flip and by the time you finish spreading the avocado onto the toast, your egg is fried just enough – crispy, brown edges with a runny yolk.

ingredients

  • 2 slices sourdough bread
  • 2 eggs
  • Butter for frying
  • 1 avocado
  • Olive oil
  • Salt and pepper

instructions

  1. Toast sourdough bread in toaster.
  2. Heat butter in pan over high heat. Crack eggs into pan.
  3. Halve avocado, remove pit, remove flesh from skin and dice into a bowl. Drizzle with olive oil, season with salt and pepper and lightly mash until spreadable but still chunky.
  4. Flip eggs.
  5. Spread avocado mash on toast. Top with one fried egg on each slice of toast. Season with salt and pepper.
